Weekend Breakfast Freekeh Recipe

Today I’m bringing you a type of recipe that I haven’t really done in a while – a breakfast recipe! And not just any breakfast recipe but a breakfast recipe that’s great for weekends. It’s what I call my Weekend Breakfast Freekeh Recipe. It’s ready in 30 minutes flat so I guess you could do it during the week, but it’s decadent and delicious so it’s probably best kept for leisurely Saturday or Sunday mornings. This dish is meant to be savored, not scarfed from a paper cup at your office desk (Side note: I don’t judge this practice – I ate breakfast at my desk from a paper cup for six years – I know it well). Weekend Breakfast Freekeh Recipe

First, let’s slow down the pace a little and take a look at what a delicious, nutritious whole grain breakfast looks like. It starts with hot, steamy, freshly cooked freekeh. It ends with fresh apples, dried cherries, toasted walnuts, and a healthy dose of freshly made honey-vanilla whipped cream. It’s tasty, it’s filling, and it’s good for you. I do believe this is in the running for the perfect breakfast. (Okay, maybe I’m a little biased, but please, entertain me!)

As you may have already guessed, the whole grain freekeh is the star of and inspiration for today’s dish. I’ve teamed up with Bob’s Red Mill once again to bring you this tasty recipe (and the giveaway!). Freekeh is the traditional grain of the Middle East. It’s made from roasted cracked green whole wheat and has a subtle smoky flavor. It’s texture is similar to spelt or farro. It cooks quickly on the stovetop in just 20 minutes using the absorption method (basically, how most people cook rice). No soaking needed. No long boil times necessary. In 20 minutes, you’ve got a tasty whole grain ready to be used in a multitude of ways. Also note that since this item is made from wheat, it is clearly not gluten free, but Bob’s Red Mill’s variety is organic (WIN!).

I’m a converted lover of freekeh. Before I tried it for testing purposes for this recipe, I’d never actually had the pleasure of tasting it. Since receiving my two test bags of it, I’ve made two cold salads with it and this breakfast freekeh dish. It’s a grain that’s great as either a savory or sweet dish – your choice. It all comes down to how you prepare it. Traditionally, for savory dishes it’s just cooked in water with a little salt. To punch it up a bit and make it more breakfast friendly, I’ve included extra ingredients like butter and coconut oil plus some spices (cinnamon, cardamom).

Weekend Breakfast Freekeh

This breakfast freekeh recipe cooks in 30 minutes and features honey-vanilla whipped cream, dried cherries, toasted walnuts, and Golden Delicious apples.

Ingredients:

Cooking the Freekeh:

  • 2 1/2 cups water
  • 1 tablespoon coconut oil
  • 1 tablespoon unsalted butter
  • 1 teaspoon ground cinnamon
  • 1 teaspoon ground cardamom
  • 1/4 teaspoon kosher salt
  • 1 cup uncooked freekeh

Honey-Vanilla Whipped Cream:

  • 1/2 cup heavy cream
  • 2 tablespoons honey
  • 1/4 vanilla bean, scraped of seeds; pod discarded

Finishing the Freekeh:

  • 1 cup chopped Golden Delicious apples
  • 1/2 cup dried cherries
  • 1/2 cup toasted chopped walnuts

Method:

  1. In a medium-sized pot that you have a lid for, add the water, coconut oil, unsalted butter, ground cinnamon, ground cardamom and kosher salt. Bring the mixture to a boil.
  2. Add one cup of freekeh, mix well, lower heat to medium, and cover the pot. Simmer for 20 minutes, until liquid is absorbed.
  3. While the freekeh is cooking, prepare the honey-vanilla whipped cream. Add the cream, honey and vanilla bean to a stand mixer fitted with the whisk attachment. Set mixer to high and whip for up to three minutes, until fluffy and cloud-like.
  4. Remove from heat and allow to stand covered for five minutes.
  5. Divide into four portions and top each with chopped Golden Delicious apples, dried cherries, and toasted walnuts. Finish each bowl with a dollop of honey-vanilla whipped cream.
  6. Stir in all the ingredients and enjoy!
