Hello dear friends! I trust that you all had a wonderful Thanksgiving holiday weekend. I hope you all were able to take a long, relaxing four day weekend like I did. This year we just stayed in New Orleans and did some light visiting but really, we kept it low key the whole time. For me, holidays are about resting and spending quality time with a few people versus trying to see everyone on God’s green earth. But that’s just me. As long as you spent the holidays in a way that you find satisfying, it doesn’t matter what it looked like.

So now that we’ve got the post-holiday banter out of the way, let’s get on to this recipe, shall we? I actually wanted to bring you this recipe last week, but since it was Thanksgiving week, I figured I’d wait till this week to publish. To me, it just feels weird publishing things on Thanksgiving week that aren’t related to Thanksgiving. However, you’re in for a treat today. This ham and braised collard greens grilled cheese sandwich recipe is a special favorite around my house. Actually, it was Jeremy who brought this idea to me in the first place, inspired by a sandwich that he’d had at Cochon Butcher, a local (and very famous) sandwich joint here in New Orleans.

The sandwich from Cochon Butcher that inspired this particular offering is called the Buckboard Bacon Melt. I’ve never actually had this sandwich, but I was able to recreate a version of it pretty easily because the original sandwich is quite simple. The original sandwich contains thick-cut lean shoulder bacon, smoky stewed collard greens, pepper aioli, and Swiss cheese on butter-toasted bread. I like to make my version with ham, my own quick braised collards recipe, and a raw cheddar cheese (for sharper flavor). I would do the aioli but Jeremy’s not really a fan of condiments so we skip that. The sandwich is still pretty darn amazing without it and a little “healthier” for you as well.

Overall, I think you’ll be pleased with this sandwich. As I said, it utilizes my quick braised collard greens recipe from earlier this year. This sandwich is what actually inspired my quick-braised collard greens recipe. I’d never really thought to publish it here until recently when I was basically like, “why not?” Jeremy loves this sandwich, and heck, I’m not really even much of a collard green lover, and I really like this sandwich. I figured I’d let you be the judge of this one.

Best thing is once you prepare the ingredients to make one sandwich, you’ll have enough fixin’s for at least four sandwiches, maybe more depending on the proportions you use with your ingredients. Of course, I’ve measured them all for you below but really, you can add as much of whatever as you feel like. I just always feel compelled to let you know the exact ingredient proportions I used then you can have the latitude to adjust to suit your own taste. Win/win, right? Glad you think so, too. On to the recipe!

Ham and Braised Collard Greens Grilled Cheese Sandwich

This tasty ham and braised collard greens grilled cheese recipe is inspired by Cochon Butcher's Buckboard Bacon Melt.


  • 1 small pat of unsalted butter or non-stick spray
  • 2 thick slices of smoked ham
  • 2 slices of sourdough bread
  • 2 teaspoons softened unsalted butter
  • 1/2 cup grated raw cheddar cheese, divided (substitute any good quality cheddar as needed)
  • 1/2 cup quick braised collard greens, warmed and drained of any liquid


  1. Start by browning the slices of ham in a small skillet. Heat the skillet over a medium high flame and melt butter (or add non-stick spray). Heat the ham in the skillet until edges start to curl and the pieces of ham are heated through, about 30 seconds on each side. Some browning is okay but keep it minimal. Set aside on a plate lined with a paper towel until ready to build the sandwich.
  2. Next, start on the sandwich. On a cutting board or flat work surface, lay out two pieces of bread. Smear each piece of bread with a thin layer of butter on one side.
  3. Over a medium-high flame, set a skillet to heat. Once you can feel heat radiating off of the skillet, add the first slice of bread, butter side down. Don't start with the heat too high or bread will brown before cheese melts.
  4. Add the first quarter cup of the cheddar cheese and scatter to cover the whole piece of bread.
  5. Next carefully layer on the braised collard greens then the two slices of heated ham.
  6. Finish the sandwich with the other quarter cup of the the cheese then top with the second slice of bread, buttered side facing outward.
  7. Cook the sandwich for about 2 minutes on the first side, until golden brown. Flip and repeat on the second side. Total cooking time should be less than 5 minutes.
  8. Once the sandwich is done, remove it from the skillet, place on a cutting board, and use a knife to cut the sandwich on a bias (at an angle).
  9. Serve at once.
