Two Easy Camping Recipes

Back in February on our hiking trip to Big Bend, we cooked two pretty tasty meals up on the mountain that I’d like to share with you. These two camping recipes are easy to prepare and sure to satisfy.

While hiking, especially on multi-day journeys, it’s important to have a real meal in the evenings at your camp site. Having enough nutritious food can make the difference in strength levels and overall general satisfaction levels.  Believe me, we’ve hiked and camped twice before we started bringing food like this. It makes all the difference.

Two Easy Camping Recipes - both vegetarian!

Okay, so my fancy Photoshop work aside, these two dishes basic and very simple to make.  They both also require very little equipment – these are things you’d bring with you if you were planning to cook anything while hiking/camping.

Equipment Needed for both Recipes:

  • Camping stove
  • Can opener (crucial!)
  • 1 quart pot
  • Stirring implement (like a spoon or fork – nothing fancy)
  • Bowl for serving

Recipe #1 – Sweet Peas with Lemon Olive Oil Sauce over Rice

Of the two recipes, this was the one I had more reservation about but was the one that turned out best.  The sauce was tangy and the rice was infused with flavor from the sauce and peas. Please note that I didn’t use the same pre-cooked rice in the “Ingredients” photo as I did in the photo of the final dish. When I went back to Whole Foods, I couldn’t find the rice again.

Camping Recipe:  Sweet Peas with Grains and Lemon-Herb Seasoning

The Ingredients:

  • 1-15 oz can sweet peas
  • 1 packet lemon-herb asparagus seasoning
  • 1-8 oz packet fully cooked rice or other whole grains

The Method:

  • Stir all ingredients in the pot until warm. Serve immediately.

Recipe #2 – Vegetarian Chili with Basmati Rice

I’m a big fan of vegetarian chili so I expected this recipe would be good. It really was, although it did need some salt (which I didn’t have). So if you’re following this exactly, bring yourself some extra salt for flavor.

The Ingredients:

  • 1-15 oz can vegetarian chili
  • 1-8 oz package fully cooked Basmati rice

The Method:

  • Stir all ingredients in the pot until warm. Serve immediately.

Conclusion:

These recipes are fairly straightforward and are very enjoyable. All of these ingredients can be found at Whole Foods and likely any other large grocery store.  In the end, you should use these recipes as a guide to help you bring food with you camping that you’ll enjoy and feel satisfied by.
