Strawberries with Prosciutto and Brie Recipe

Lately I’ve been working on simplifying my life. I know I’ve mentioned that before, but it’s something that’s truly meaningful to me. I’m fairly “Type A” and can really overload myself if I’m not careful. I honestly think I can “do it all.” But really,I can’t. It’s not that I’m not capable of accomplishing a great deal – I certainly am. But I have been working to set realistic goals and that’s been awesome.

What’s funny is that one day I realized what I was doing to myself. I was making these huge, ambitious to-do lists. When I look back I see how unrealistic they were. So I’d work all day and inevitably have to move things over to the next day’s to do list. Then I’d feel deflated because I hadn’t achieved all the day’s goals. While I was accomplishing a good deal, I wasn’t able to celebrate that.

What I do now is that I commit to accomplishing four things each workday. And that’s so much more realistic. I’m still getting about the same amount of stuff done that I was previously, but now when I finish I feel a sense of accomplishment. I achieve my goals daily instead of feeling like I’m not doing well enough or producing enough output. Same end result. But very different mental state over it. I’ve learned to set myself up for success instead of a feeling of failure. And it’s been working much better.

I’ve also learned how to implement a workday and work hours on myself. Being self-employed, it’s very easy to think that all your time can be work time. Not so. Again, setting some realistic boundaries with myself on what is and isn’t work time has really helped focus my work day. Setting realistic parameters around work time has been extremely helpful.

In Cooking:

As I said on Wednesday, I’m bringing you two hors d’oeuvres recipes this week with strawberries. This is actually the last strawberry recipe that I have planned for the moment. It’s been a great run, and this strawberries with prosciutto and brie recipe is a pretty rockin’ way to end it. It’s truly as simple as it sounds and is very delicious. I know you’ll love it.

Strawberries with Prosciutto and Brie

Strawberry, brie and prosciutto are such a delicious combo. The sweetness of the strawberry pairs well with the creamy tang of the brie. The salty nature of the prosciutto balances the two and provides an interesting contrast to the strawberry’s sweetness. In the end, the combination of the three is simply superb.

The best part about this hors d’oeuvre is that the simplicity level to create and the impressive level to guests are inversely proportionate. This means it will take you 10 minutes to make these and everyone will be super impressed with them! That’s a win/win if I’ve ever seen one.

Quick, Easy, Elegant: Strawberries stuffed with Brie and wrapped with prosciutto

When I made this recipe I was actually able to find a small stick of brie that was perfect for this use. I just cut little pieces off the brie, placed them on the strawberry and then wrapped the whole thing with prosciutto. Quick, easy, elegant. Below I show little step-by-step. Not that you really need it. 😉 What’s funny is I did it left-to-right so it’s not “in order”, but I think you can figure it out.

Quick & Easy: Cut strawberries in half length-wise; stuff with brie then wrap in prosciutto

These should be made the day you’re planning to serve them because strawberries cut in half length-wise don’t keep super well for more than a day. Also, the brie will start to run after being in contact with the moist strawberry for too long. I recommend just putting these together right before you serve, for best results. With a 10 minute prep time, that should work with any schedule.

Strawberries with Prosciutto and Brie Recipe

A quick, delicious and elegant hors d'oeuvre: strawberries with prosciutto and brie. It's half a strawberry stuffed with brie then wrapped in prosciutto.

Ingredients:

  • 12 strawberries, cut in half length-wise (keep stems on)
  • 0.25 ounce chilled brie, cut into small rectangular sticks
  • 2 ounces thinly sliced prosciutto

Method:

  1. Place a small stick of brie in the middle of the strawberry half.
  2. Wrap with a thin slice of prosciutto.
  3. Serve immediately.
