Sausage & Cheddar Stuffed Mushroom Recipe with Sriracha-Yogurt Dipping Sauce

I’m sure you’re still halfway through your turkey-induced weekend coma. That’s okay. This is the time of year to celebrate and give thanks. Simply Organic Spices

Along with each giveaway, we have a cooking challenge that we need to fulfill as well. This month we were tasked with putting our unique twist on a traditional holiday appetizer using one of Simply Organic’s spices or extracts, and we were to pair that with a dipping sauce made with Stonyfield’s yogurt. I have to admit this was a bit of a challenge for me. Especially because of the dipping sauce component. I thought of like 10 things I could remake but none of them required a dipping sauce.

So then I got creative. I thought about a stuffed mushroom recipe and how common those are. But then I decided to make a meat-centric one stuffed with ground pork and cheddar cheese. Oh yum, I was on to something. And in order to punch up the flavor of my dish even more, I used Simply Organic’s thyme leaves, ground sage and rosemary leaves. This made the mushrooms taste like they were stuffed with some delicious sausage. Can’t go wrong with sausage and cheese!

I love the mushrooms I was able to find at my local grocer. They’re produced by Dole, and they’re actually large mushroom caps packaged specially for stuffing. They’re basically just large button mushrooms, but they’re all large and fairly uniform in size. They’re perfect for stuffing, truly. I was happy to see something like this in the produce section. I don’t do stuffed mushrooms often so I wasn’t even aware that these were sold.

Overall this recipe is rather simple to prepare. Within 45 minutes you go from prepping to eating. Not bad overall. The process for creating these delectable delights is little more than browning the pork and garlic with the spices. Then pulling that from the heat, allowing it to cool slightly, then mixing in cheddar cheese. After that it’s stuffed into the mushroom and baked. Wonderfully simple and totally tasty. Just my type of appetizer, for sure.

Now while your mushrooms are baking, you can whip up the dipping sauce. I used a mixture of sour cream and Greek yogurt because I like the extra tang sour cream offers. I have stopped using mayo in my kitchen, and is a little more challenging to make sauces like this one. But a combination of Greek yogurt and sour cream can work wonders. I spiced this up a bit with some Sriracha, I hope you don’t mind. Even though the sauce is a little spicy, it pairs well and has a cooling effect on the stuffed mushroom. I really liked the two together.

Sausage & Cheddar Stuffed Mushroom Recipe with Sriracha-Yogurt Dipping Sauce

This stuffed mushroom recipe is packed with spiced ground pork, cheddar, and garlic. Paired with a Sriracha-yogurt dipping sauce, this dish can't be beat.

Ingredients:

Stuffed Mushroom Caps: 

  • 24 large mushrooms caps
  • 1 pound ground pork
  • 1 tablespoon minced garlic
  • 1 teaspoon onion powder
  • 1 teaspoon kosher salt
  • 1 teaspoon dried thyme
  • 1 teaspoon dried rosemary
  • 1 teaspoon ground sage
  • 1/2 teaspoon Worchestershire sauce
  • 1/2 teaspoon Dijon mustard
  • 1/4 teaspoon smoked paprika
  • 1/4 teaspoon cayenne pepper
  • 1 cup cheddar cheese

Sriracha-Yogurt Dipping Sauce:

  • 1/2 cup Stonyfield Greek yogurt
  • 1/2 cup sour cream
  • 2 tablespoons thinly sliced green onions
  • 2 teaspoons Sriracha
  • 2 teaspoons lemon juice
  • 1 teaspoon lemon zest
  • 1 teaspoon dijon mustard
  • 1/2 teaspoon kosher salt
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon onion powder
  • 1/2 teaspoon dried dill
  • 1/8 teaspoon ground black pepper

Method:

  1. Pre-heat oven to 350 ºF.
  2. Rinse mushroom caps and remove stems if needed. Set on paper towels to drain and dry.
  3. Over medium high heat, add ground pork and the remaining ingredients (EXCEPT the cheddar cheese) to the skillet. Cook for 10-12 minutes until pork is browned.
  4. Remove from heat and transfer the pork mixture to a bowl and allow to cool slightly. When it stops steaming, it’s going to be cool enough. Mix in the cheddar cheese - stir well to combine.
  5. On a rimmed sheet pan lined with parchment, lay out the mushrooms, stem-side up.
  6. Fill each mushroom with about a tablespoon of the mixture. Press slightly to make sure the filling stays on the mushrooms.
  7. Carefully place in the oven and bake for 25 minutes.
  8. While the mushrooms are baking, work on the sauce. Add all ingredients under the Sriracha-Yogurt Dipping Sauce section to a bowl and whisk to combine. Refrigerate while the stuffed mushrooms are in the oven.
  9. When the mushrooms are done, remove from the sheet pan from the oven and set to cool. Serve with Sriracha-Yogurt dipping sauce.
