Roasted Red Pepper Relish Recipe

Something I’ve been working on recently is reframing the ongoing narrative in my brain. Stepping away from negative or limiting thoughts and beliefs and moving those into positive or actionable thoughts. I read this great article from the Huffington Post that gave me some great tips and tools to continue doing so.

Overall, I find that the narrative inside my head is mostly positive. Thankfully I don’t suffer from low self-esteem nor am I plagued with negativity and self-doubt. But what I can be guilty of is not believing in myself enough. Or rerunning the mental tape of my life to see where I shoulda, coulda, woulda done better. I really feel like these are my last vestiges of negative thought patterns. But man, these are so hard to break.

However, I do not let these thoughts deter me. I have been living more mindfully and aware of when this type of thinking hits me. I actively choose to reexamine what I’m thinking and reframe things in a positive manner. Instead of “I should work out more,” I now say “I choose to exercise so that I can have a healthier mind and body.” It’s a simple reframing that works wonders for me. This is but one example. I’ve applied it to many situations recently from food to alcohol to personal relationships.

Today I’ve got a pretty simple recipe for you. It’s actually a roasted red pepper relish recipe. It’s delicious on its own or used as an ingredient in other dishes. I’m bringing you this short recipe as its own blog post because I have at least two dishes coming in the next few weeks that use it. One will be my final Kamut dish for my partnership with Bob’s Red Mill, and the other will be tasty sandwich (details to come!).

Roasted Red Pepper Relish Recipe

This relish recipe contains five simple ingredients and can be prepared in under 10 minutes. This assumes of course that you’ve already got roasted red bell pepper on hand. Which I do try to keep at all times. It’s such a useful and versatile ingredient. The fresh basil leaves and garlic make this relish, in my opinion.

As I said, while I created this relish to use as an ingredient in other dishes, you can use this as a dip for pita chips. It’s definitely tasty enough and balanced enough to serve as a dip on its own. It would also be fantastic mixed into a plain hummus or baba ganoush. I think that would really take the flavors of each up to another level. That actually sounds so good I’m going to try it next time I make this relish.

Roasted Red Pepper Relish Recipe

This roasted red bell pepper relish recipe features garlic, basil and capers. It's very versatile and great as a dip, sandwich spread or salad dressing.

Ingredients:

  • 1 cup roasted red bell pepper
  • 1/2 cup tightly packed basil leaves
  • 2 tablespoons capers
  • 2 tablespoons roughly chopped garlic
  • 1 teaspoon kosher salt

Method:

  1. Add all ingredients to a food processor and process until no large chunks remain.
  2. Use immediately or transfer to an air tight container and store for up to a week in the refrigerator.

Add an hour to prep time if you need to roast the red bell peppers.
