Vegetable Stock Recipe

This is a basic recipe for vegetable stock.  While it is easy to buy stock from the grocery store, homemade stock tastes so much better.  This recipe is a very easy version that requires no roasting of vegetables beforehand.  This recipe also freezes very well and can be stored in the freezer for up to a year in an air-tight container.

Vegetable Stock Recipe

A basic recipe for homemade vegetable stock. 5 simple ingredients, one great stock.

Ingredients:

  • 10 cups water
  • 8 cups large chopped onions
  • 2 cups chopped celery (1/2″ pieces)
  • 2 cups chopped carrots (1/2″ pieces)
  • 1/2 cup garlic, cloves cut in half length-wise
  • 1 bunch of parsley, roughly chopped

Method:

  1. Add all ingredients to a pot and bring to a boil.
  2. Reduce to a simmer and cook for 45 minutes.
  3. Strain stock and discard left over vegetables.
  4. Use stock as a base for soups and sauces or any place where stock is called for.
