Soba Noodles with Green Beans & Shiitakes Recipe

I came up with this recipe last fall when Jeremy was having trouble with his gallbladder and just getting around to posting.  This is a fairly quick and easy vegan recipe for an Asian style pasta.  Hope you enjoy!

Yield: 2 entrée-size portions

Soba Noodles with Green Beans & Shiitakes Recipe

An Asian-inspired recipe for soba noodles with french green beans and shiitake mushrooms. The spicy sauce makes this dish.


  • 1/4 cup light olive oil
  • 1/2 cup thinly sliced cipolline onions
  • 2 tablespoons minced garlic
  • 1 1/2 cup sliced shiitake mushrooms
  • 2 cup fresh french green beans (aka haricot verts), ends trimmed
  • 1/2 cup thinly sliced green onion tops
  • 3 cups cooked soba noodles



  1. While prepping the vegetables, bring a large salty pot of water to boil and first parboil the green beans.
  2. Remove the green beans without emptying the water – you’ll need this for boiling the soba noodles next.
  3. Cool the green beans immediately in icy water, drain and set aside for now.
  4. Bring the water back up to a boil and cook the soba noodles according to package directions.  Once done, cool in a colander and set aside as well.
  5. At this point, if you’ve not already done it, combine all of your ingredients for the sauce in a measuring cup or mixing bowl and set aside.
  6. Heat olive oil in a large skillet or pot on medium high heat.
  7. Add in cipollines and saute 3-5 minutes until softened.
  8. Stir in garlic and cook 1-2 minutes until fragrant.
  9. Add in the shiitakes and cook an additional 2-3 minutes until softened.
  10. Next mix in the sauce and stir till sauce is heated through, about 3 minutes.
  11. Mix in the soba noodles and green beans and keep mixing until the noodles and beans are heated through, another 3-5 minutes. Serve immediately.
