Scrambled Egg Ratio

During Jazz Fest, I cooked scrambled eggs one morning.  I had a request for my recipe and I realized that I didn’t really have one.  The next weekend, I got to work creating not a recipe but a ratio for good scrambled eggs.  Below is a basic ratio for ingredients and some cooking suggestions.

Scrambled Egg Sandwich

Scrambled Eggs on English Muffin with Sharp Cheddar Cheese

Yield: 2 servings

Scrambled Egg Ratio

An easy guide to making great scrambled eggs. Includes ingredients and tips for making tasty eggs.

Ingredients:

4 eggs
1/4 t dill
1/4 t garlic powder
1/2 t seasoning such as Slap Ya Mama, Zatarain’s Creole Seasoning or Tony Chachere’s

Method:

  1. Heat a non-stick skillet to where you can feel the heat rising off of it.
  2. Spray the pan with non-stick spray such as PAM.
  3. Pour in the egg mixture and allow it to start to cook before mixing.
  4. Mix well but allow the eggs time to solidify in the pan.
  5. Cook until almost dry but still a little shiny.  Brown eggs are overcooked eggs.
  6. Quick breakfast sandwich: serve with some cheddar cheese on a toasted English muffin
