Purple Cabbage & Spinach Salad Recipe

Last weekend I found myself with a purple cabbage and several oranges left over from last week’s trip to the Hollygrove Farmer’s market.  The two seemed to go together so I did a quick internet search, found this recipe  and came up with my version of this great winter salad.  The spinach salad recipe ends up with a nice earthy and savory flavor punctuated by the tart sweet orange juice.

Yield: 6-8 side portions, 3 entrée portions

Purple Cabbage & Spinach Salad Recipe

An easy, fresh, bright spinach salad recipe with purple cabbage and orange segments. The dressing is a light orange vinaigrette.



  • 1 small head purple cabbage, core removed and thinly sliced (about 5 cups)
  • 1-6 ounce bag of baby spinach, stems removed from leaves
  • 3 oranges, rind cut off and flesh cut into supremes
  • 1/2 cup thinly sliced green onions



  1. In a large mixing bowl, add cabbage, spinach, orange supremes and green onions.  Mix well until well incorporated.
  2. Pour the vinaigrette over the mixture and mix again very well.
  3. Let sit for an hour in the fridge so the flavors can marry and the cabbage starts to soften a bit.
  4. Note – this salad will keep up to three days but looks best on the first day.
