Mediterranean Orzo Salad Recipe

Another quick and easy pasta salad recipe.  My favorite thing about this is that only the orzo needs to be cooked.  The rest is chop and mix.  This is also a very healthy and flavorful dish that’s very satisfying.

Mediterranean Orzo Salad Recipe

Tasty orzo salad recipe featuring olives, artichokes, tomatoes and feta cheese. Packed with flavor!


  • 1 cup roughly chopped olives and roasted garlic
  • 1 cup finely diced red onion
  • 1-14 ounce can small artichoke hearts, quartered
  • 1 cup chopped tomato
  • 2 tablespoons white wine vinegar
  • 3 tablespoons light olive oil
  • 1 teaspoon dried oregano
  • 1-16 ounce package orzo, prepared according to package directions
  • 4 ounces feta cheese, crumbled


  • In a large mixing bowl, add first four ingredients and mix well.
  • In a measuring cup, mix vinegar, oil and oregano. Pour into large mixing bowl with the other ingredients and mix well.
  • Next add the orzo and mix well.
  • Finally, add the crumbled feta to the bowl and mix gently so as to keep the feta crumbles intact.
  • This will keep up to a week in the fridge.  Tastes best if you can let it sit a couple of hours.
