Barbecue Chicken Pasta Recipe

We had quite a bit of meat left over from our 4th of July BBQ so I decided to make a few different things out of it.  We made some tasty pork sandwiches with the leftover grillades, ate the left over ribs cold (still delicious), but I did something special with the left over chicken thighs and grilled corn.  Inspired by these two items, I came up with a quick and easy pasta recipe.   This recipe takes hardly anytime to complete – within an hour you should be cleaning the kitchen!  As always, thanks for reading and Enjoy!


Please note that this spice rub is what we used for the baby back ribs for 4th of July. It gave the pasta a nice smoky, sweet flavor. This recipe can be scaled down if you’re only making it for the pasta above.

Yield: 3 servings

Barbecue Chicken Pasta Recipe


3 tablespoons olive oil
1 onion, cut in half then thinly sliced
1/2 head garlic, minced
2 barbecued chicken thighs, skin removed and meat shredded by hand
2 Creole or Roma tomatoes, diced
3 ears of grilled corn, kernels cut off cob
1/4 cup compound butter – rib seasoning (recipe below)
4 cups boiled pasta
2 tablespoons thinly sliced green onions
Kosher salt, to taste

Rib Spice Recipe:

1/2 cup brown sugar
1/4 cup Hungarian hot paprika
3 tablespoons Lawry’s seasoned salt
2 tablespoons chili powder
1 tablespoon ground black pepper
1 tablespoon celery salt
1 tablespoon onion powder
1 tablespoon garlic powder
1 teaspoon ground sage
1 teaspoon dry mustard


Method for Pasta:

  1. Over a medium-high flame, heat the olive oil.  Add the onion and saute till softened a bit, about 5 minutes.
  2. Add the garlic and cook until garlic is very fragrant, about one minute.
  3. Add tomatoes, corn and chicken. Stir well then add compound butter.
  4. Cook until bubbling and warmed through, about 10 minutes.
  5. Pull the pot off the heat and add the pasta and green onions.

Method for Rib Rub:

  1. Combine all ingredients in bowl and whisk until mixed.
  2. Use 2T of this mix with 1/4 cup of butter to make the compound butter used in the pasta recipe above.

Prep:25 minutes

Cook:15 minutes

Total:40 minutes
