Eggplant & Chickpea Dip Recipe

This eggplant and chickpea dip recipe is essentially a hybrid of hummus and baba ganoush – I lovingly refer to it as baba ga-hummus.  It is a very flavorful and very healthy dip that can also be used as a sandwich spread.  Hope you enjoy!

Some tips to remember when preparing this recipe:

  • Roasting eggplant can be done very easily by cutting the eggplant in half length-wise, rubbing the flesh with salt and a little olive oil and then placing under a pre-heated broiler for 5 minutes or so.  Since each broiler is different, be sure to watch very carefully.
  • This dip keeps very well in an air tight container for up to one week.  The taste of the lime can diminish in that time so you may want to try the dip after a few days and add more lime juice if desired. I recommend trying a half lime’s worth of juice at a time to see how it tastes to you.
  • Serve with whole grain pita, whole grain pita chips, celery and/or carrots.

Eggplant and Chickpea Dip Recipe

This eggplant and chickpea dip recipe is a hybrid of hummus and baba ganoush. The combination fo the two dishes produces a new tasty treat.

Ingredients:

  • 3 limes juiced + the zest of 2 of those limes
  • 1/2 cup light olive oil
  • 1/2 cup water
  • 2-15 ounce cans of chickpeas, drained and rinsed
  • 1 cup roasted eggplant
  • 1 tablespoon kosher salt
  • 1/2 cup thinly sliced green onion

Method:

  1. Combine liquid ingredients (lime juice/zest, water and olive oil) in a large measuring cup.
  2. Place half the chickpeas and roasted eggplant into a food processor.
  3. Next add in half of the liquid ingredients from the measuring cup.
  4. Once that is pureed, transfer to a separate mixing bowl. Repeat steps 2 and 3 with remaining ingredients.
  5. Add that mixture to the mixing bowl as well.
  6. Add in the salt and stir the contents of the bowl very well.
  7. Top with green onions and chill the dip for about an hour for best taste.

Prep time doesn't include time to roast the eggplant, if needed.
