Super Creamy Macaroni & Cheese Recipe

Best mac n cheese ever!! This recipe is rich, decadent and extremely tasty! I found the basic recipe in an O Magazine article a few years ago and it was adapted from a recipe taken originally from Gourmet in February 1994. I changed things up a bit and made it much better with the addition of a potato chip and Parmesan cheese crust.

The sheer volume of cheese in this recipe may seem staggering but it’s all needed. Trust me!

Super Creamy Macaroni and Cheese Recipe

Yield: 8 main dish; 12 sides

Super Creamy Macaroni and Cheese

Ingredients:

  • 6 tablespoons unsalted butter, plus extra for preparing baking dish
  • 1/4 cup + 2 tablespoons all-purpose flour
  • 4 cups whole milk
  • 1 tablespoon Dijon mustard
  • 1 teaspoon kosher salt
  • Dash of cayenne pepper
  • 1 pound pasta (elbows, bowties, your choice), cooked al dente
  • 2 cups shredded cheddar cheese
  • 1 cup shredded Havarti cheese
  • 1 cup shredded Parmesan cheese

Topping:

  • 1/3 cup grated Parmesan cheese
  • 1 cup crushed kettle potato chips (preferably Zapp’s Crawtators)
  • 1 tablespoon butter, for dotting top

Method:

  1. Pre-heat oven to 350º F and butter a three-quart baking dish.
  2. In small bowl, combine the ingredients listed under Topping. Stir well and set aside for now.
  3. In a large soup-sized pot, melt 6 tablespoons of butter over low heat. Add the flour, and mix well with a wire whisk, stirring constantly for 3 minutes. You want to achieve a blonde roux, only slightly changed in color.
  4. Gradually whisk in milk until blended. Then add the mustard, salt, and cayenne. Bring to a simmer and cook, stirring occasionally, until thick (about 2 minutes).
  5. Shut off the flame, and add the macaroni and grated cheeses. Stir well to combine then spoon into prepared baking dish and spread evenly.
  6. Sprinkle the chip-parmesan topping evenly over the pan of macaroni. Cut the remaining tablespoon of butter into small pieces and dot the top of the dish.
  7. Bake until golden brown and bubbling, about 25 to 30 minutes.
