Chilled Soba Noodle Salad Recipe

Soba noodles are some of my favorite types of noodles and since it’s hot as heck down here in New Orleans, I decided to make a soba noodle salad.  Bonus – this is one of the easiest recipes I’ve made in a long time.  It does take a little to chop the vegetables, but it is so worth it. This salad tastes best when it’s allowed to sit for a couple of hours and believe me,  it is worth the wait.

Jeremy really liked this one.  Next time I’m going to pickle the carrots first.  Once I do that, I’ll update the recipe.  Enjoy!

 

Soba Noodle Salad

Yield: 4 servings

Chilled Soba Noodle Salad Recipe

A tasty Asian-inspired salad recipe with tons of fresh veggies and delicious soba noodles.

Ingredients:

8 oz soba noodles, prepared according to package directions

Dressing:

  • 1/3 cup rice vinegar
  • 1/3 cup light olive oil
  • 1 tablespoon Sriracha sauce
  • 1 tablespoon sweet chili sauce
  • 1 tablespoon hoisin sauce
  • 1 tablespoon sesame oil

Veggies:

  • 1 cup match stick cut yellow bell peppers
  • 1 cup thinly sliced baby carrots
  • 1 cup deseeded and thinly sliced cucumber
  • 1 cup thinly sliced celery
  • 1/2 cup thinly sliced green onion
  • 1/2 cup whole cilantro leaves (no stems)

Method:

  1. Combine the dressing items into a large bowl and mix very well.
  2. Next add in all the veggies, stirring well.
  3. Finally, stir in the soba.
  4. Allow to sit in the fridge for 2 hours for best flavors.
