Breakfast Fruit Smoothie with Strawberries, Blueberries, Spinach and Greek Yogurt

In Life:

Doesn’t it seem like time speeds up in the morning? One second you’re hitting the snooze button and then the next, it’s already past time to get up and out of bed. Eek! Where has the time gone? I’m truly convinced the morning time is a huge black hole that just sucks up time and steals it away from us. Funny thing is, this rarely occurs on weekends. Interesting, eh?

While I’ve been doing my best to wake up early in the morning, and I’m typically successful with it, I do hit mornings where I just cannot get out of bed. The allure of the snooze is so powerful, and I’m so weak. So I tell myself  just one more time (which it never is). And before I know it, it’s gotten late. And it’s really time to get out of bed. I’m thankful this doesn’t happen daily, but it happens at least once a week.

But the worst thing about this morning time disappearance is not only does it perhaps make us late for work or getting the kids to school, but it also usually impedes on a very sacred part of the day – breakfast! Some people don’t eat breakfast because they feel they don’t need it. But still there are others who would love to eat breakfast but can’t find the time. Today I’m here to say that with the right breakfast, you can have a busy morning and still eat breakfast. It’s true, and it can be a good, healthy breakfast at that. The solution is actually quite simple – a smoothie!

In Cooking:

Last week I brought you a more involved frittata breakfast. This week we’re going back to super duper easy – we’re going to make a breakfast fruit smoothie recipe featuring Greek yogurt, honey, strawberries, blueberries and my favorite, spinach! A super smoothie for sure. It’s delicious, satisfying and healthy. Pretty much covers all the bases.

And I will note here – as with the parfait a couple of weeks ago, please feel free to substitute out anything that’s in season or that you’d prefer besides these ingredients. I used the ingredients below because they were available at the farmer’s market the day I was doing my shopping. Since this is made from all local ingredients, I was a bit limited. And frankly, there’s really no right or wrong with a smoothie – you can put anything you like in them.

Breakfast Smoothie Key Ingredients

This simple smoothie can easily become your go-to breakfast. It takes only about five minutes and then it’s off to the races. Or your workday. Whichever is at hand. Something else to add to this would be chia, hemp or flax seeds. I didn’t use any of those since we don’t grow them locally here, but otherwise, I would have added one of those in. They provide even more protein and great nutrition making this smoothie an even better meal for you.

So what about you? What’s in your favorite smoothie? I’d love to hear about flavor combinations you’ve been enjoying. I’ve really just started getting into smoothies, and this is actually my first published smoothie recipe. Hard to believe!
