Beef & Carrot Rice Recipe

This dish is home.  This dish is comfort food.  Ground beef and carrot rice may sound simplistic, but it is mighty satisfying and tasty.

This weekend Jeremy and I have been baby-sitting my nephew for my sister and brother-in-law.  They were pretty hard hit by Hurricane Isaac in lower Lafourche parish and still don’t have power as of yet.  Thankfully, they didn’t suffer any other damage to their home and property but after a few days, they  needed some “mom and dad time.”

Beef and Carrot Rice Recipe

Since Jeremy and I do have power already (thankfully!!!) we volunteered to take my nephew (affectionately called Bubby) for a couple of nights.  I know he’s been out of his element with the storm and what not so I wanted to make him some of his favorite dishes from home.  This dish is one of them.  My sister makes ground beef and carrots for him all the time so I figured I’d do the same.  Below is the recipe I fashioned from a basic list of ingredients my sister provided.

Tips:

  1. You can use either regular carrots or baby carrots – whichever you prefer.  If you use baby carrots, you may only want to halve them length-wise.
  2. Prepare the rice for this dish the normal way you’d prepare rice for any other rice dish.
  3. Stirring the carrots frequently will help ensure that they cook evenly.
  4. This dish reheats really well and can be kept for up to a week in an air tight container.
Yield: 6 servings

Beef & Carrot Rice Recipe

A tasty recipe for ground beef featuring carrots and rice. This dish is pure comfort food and healthy as well.

Ingredients:

  • 1 pound lean ground beef
  • 1 teaspoon kosher salt
  • 2 tablespoons olive oil
  • 2 yellow onions, diced
  • 2 teaspoons kosher salt
  • 1 tablespoon garlic powder
  • 1 pound carrots, peeled and diced
  • 4 cups cooked rice (start with 1 cup uncooked rice and 2 cups water)
  • 2 tablespoons dried parsley

Method:

  1. Set the rice to cook in a rice cooker or on the stove top.
  2. Brown the ground beef in a skillet. Add a teaspoon of kosher salt while browning.  Drain fat and set aside.
  3. Heat the olive oil over medium high heat in a pot with a lid.
  4. Add the onions, garlic powder and two teaspoons of kosher salt.
  5. Saute for about five minutes until onions wilt a little and begin to look translucent.
  6. Add the carrots and stir well.
  7. Turn the heat down to medium-low and cover the pot.
  8. Cook the mixture for an additional 20 minutes stirring occasionally.
  9. After 20 minutes, remove the pot lid and cut off the heat.
  10. To finish the dish, stir in the ground beef, cooked rice and parsley and serve.
