African-style Okra and Tomatoes Recipe

For years, I’ve been making the same okra and tomatoes recipe.  While Jeremy and I love it very much, we were also looking to expand our flavor horizons with okra as well. I found this great recipe on NYTimes.com and have altered it below to better suit our budget and tastes.  It’s definitely an interesting way to prepare okra, and I’m adding this one to our okra season dinner rotation for sure.

African-style okra and tomatoes – we really liked the addition of potatoes and spices to the traditional Southern okra and tomatoes dish.

African-style Okra and Tomatoes Recipe

An African-inspired recipe for okra and tomatoes packed with flavor and a variety of spices.

Ingredients:

  • 1 pound okra, ends trimmed
  • Kosher salt, as needed
  • 1/2 cup white wine vinegar
  • 2 tablespoons light olive oil
  • 2 large yellow onions, finely chopped
  • 1 teaspoon kosher salt
  • 1 pint button mushrooms, stems removed and sliced
  • 3 large tomatoes, crushed by hand or with an immersion blender
  • 1/4 cup finely chopped cilantro
  • 1 tablespoon garlic powder
  • 1/2 teaspoon black pepper
  • 1 teaspoon ground turmeric
  • Dash ground cinnamon
  • Dash of nutmeg
  • Dash of allspice
  • 1 pound waxy potatoes, peeled and diced into 1/2 inch cubes
  • 1 cup water

Method:

  1. Place trimmed okra in a bowl with vinegar and a liberal pinch of salt. Marinate for at least 30 minutes while prepping other ingredients. Stir every few minutes to ensure the okra processes equally.
  2. Heat the olive oil over medium high heat. Add the onion and 1 teaspoon of salt. Sauté about 5 minutes, until softened and slightly brown.
  3. Add mushrooms and cook an additional 3-5 minutes until mushrooms are softened.
  4. Next add in the tomatoes, cilantro, all spices and the potatoes. Stir very well to incorporate.
  5. Bring to a simmer and cook uncovered for 10 minutes total. Lower heat a little if the mixture is getting to the boil stage.
  6. While the mixture is simmering, drain the okra and rinse thoroughly.
  7. After 10 minutes, add the okra and water to the pot. Cover and reduce heat to low. Simmer lightly for 45 minutes, stirring every 5-10 minutes.
  8. Once done, remove the okra with tongs and slice into 1/2 pieces. Add back to the pot, stir well and serve.
